About us

Ciao Gluten was born with the idea of making gluten free products that taste as good as ‘glutinous’ products.

Our secret is passion and high quality. We regularly experiment with new recipes, using only fresh and natural ingredients. All products are hand-made in our dedicated gluten-free kitchen in Haarlem.

Delicious food for everyone, including those who are allergic/intolerant/sensitive to gluten or simply follow a special and healthy diet. You would not notice any difference with “regular” products, rather you would taste unique flavours thanks to the ability and creativity of the cooks, keeping alive their love and tradition for Italian cuisine.

Founder & Chef

Mirko Baldi graduated in Economics in Italy in 2010. His big passion for food pushed him to work as cook for several restaurants. In 2014 He was diagnosed with coeliac disease (gluten allergy), He turned the initial shock into a challenge: making gluten free products that taste good as ‘glutenous’ products. Ciao Gluten!

Pastry Chef 

Libera Viganò (Pastry Chef), obtained her master’s degree in agricultural sciences in Milan. In 2016 she decided to turn her passion for pastry into a job, creating “Le dolcezze”. She pays particular attention to cake design, making and decorating cakes for all occasions. Together with Mirko, she participates in the creation of the sweet recipes for Ciao Gluten.
